75% Mencia co planted with Garnatxa Tintorera, Merenzao and some Palomino and Doña Blanca. Lately planting more Godello.
Fermentation
Indigenous yeast, reds ferment in foudres, open oak barrels and stainless steel tank, the whites in oak barrel and stainless steel tank. For single vineyards reds we don't usy any press, just the free run juice.
