100% Garnacha
Fermentation
Fermentation in oak vats, soft maceration with no use of pump-over or aggressive extraction. 100% whole bunch fermentation with only indigenous yeasts. Long maceration, around 60-70 days. Average SO2 is around 20 mg/l of free sulphur.
Aging
In oaks, vats, and barrels. Always old oak. Range in size from 600L to 2500L
