Fermentation
Grapes dry by naturel air for the Amarone, than whole bunch pressed and fermented on concrete tanks. After fermentation the grapes are used following the ripasso methode for the second time. Grapes for the Valpolicella are dried for 2-3 weeks to give to wine some more structure.
