Füleky - Tokaji

Hongarije, niet een land dat we direct koppelen aan topwijnen. Maar in de 17^e en 18^e  eeuw was dat wel anders. In die periode behoorde de Tokaji wijn onder invloedrijke staatslieden tot de belangrijkste wijnen van Europa. Het verhaal gaat dat in Tokaji, ergens rond het jaar 1571, voor het eerst gesproken is van edele rot, veel eerder al dan bijvoorbeeld langs de Mosel en Sauternes. In de kelders van de voormalige Sovjet-Unie zijn unieke flessen met zeer oude Tokaji gevonden. Enkel en alleen ‘Het IJzeren Gordijn’ heeft ervoor gezorgd dat de westerse landen de Tokaji uit het oog zijn verloren. Na de val hiervan zijn er een aantal gerenommeerde producenten uit Bordeaux en het Spaanse Vega Sicilia een joint venture gestart in deze regio, en dat heeft hen geen windeieren gelegd.

Tokaji dankt haar faam aan de edelzoete wijn die gemaakt wordt van drie Hongaarse druivenrassen. De bekendste is Furmint (voor de zuren), die wordt aangevuld met Hárslevelü (een kruising van Furmint & Plantscher, ideaal voor edele rot) en Sárga Muskotály (gele Muscat, exotische druif). György Füleky, de oprichter van Füleky, heeft jarenlang gewerkt op het researchinstituut van de regio en heeft samen met een groep geleerden een nieuwe druif ontwikkeld genaamd Kabar. Dit is een kruising van Hárslevelü en Bouvier. 

Het Puttonyos (emmertje) systeem geeft de zoetheid van de wijn aan. Een Tokaji Aszu is in de basis een Spätlese-achtige wijn die tijdens de gisting in een Gonci (140l) aangevuld wordt met emmertjes (20kg) edel gerotte druiven. Indien er op het etiket vijf Puttunyos vermeld worden, dan zijn er vijf emmers (100kg) met edel gerotte druiven toegevoegd.

Füleky werd opgericht door György Füleky en is in 2007 overgenomen door Péter Lovas. Inmiddels beslaat het domein 25 ha in zes verschillende dorpen, gelegen in het noordoosten van Hongarije. De laatste tien jaar zien we steeds meer droge gastronomische wijnen van Furmint op de markt verschijnen. De unieke vulkanische bodem in het heuvelachtige gebied geeft de wijnen een mooie zuurgraad en een eigen, energiek karakter. In het voorjaar 2018 zijn we gestart met een nieuwe range Fülöp. Dit is wat lichter en fruitiger dan de Füleky range.

In a ferment about Furmint

By comparing it with Riesling, its ability to span the gamut of bone dry to lusciously sweet while holding on to its razor-sharp acidity; or with Chenin, as full of flavour and structure at 11.5% as it is at 15.5%; or with Chardonnay, turning out stainless-steel-fermented, youthful crispness as easily as oak-fermented, barrel-aged richness.”

Furmint has a particularly sensitive ability to transmit terroir... Having said that, what Hungary does not need to do is prove that its dry Furmint, especially from the stony, volcanic soils of Tokaj..., is capable of producing fine, layered, astonishingly complex and ageworthy whites. They speak for themselves.„

The birthplace of this variety is north-eastern Hungary, in Tokaj, where a document dating back to 1571 first mentioned ‘the genuine Tokaji Aszú grape’ in the Hétszőlő vineyard. In 1611 the name Furmint was recorded for a vine growing in a vineyard 20 km north of the village of Tokaj. Today there are about 4,000 ha (9,800 acres) planted in Hungary, most of which are planted in the Tokaj region.

It is rarely found outside of Central Europe, with just 9 ha (22 acres) in eastern Austria, about 700 ha (1,700 acres) in Slovenia and 420 ha (1, 040 acres) in Croatia where, in the latter two countries it is known as Šipon.

Furmint – a grape for February

„It came to general attention among Tokaj wine producers that these dry wines were rather good, and might be considerably easier to sell than necessarily more expensive sweet wines. Furthermore, without the overlay of noble rot, dry wines are particularly good at expressing fashionable vineyard character.

Since then such wines, and dry varietal Furmint in general, have really caught on, particularly on export markets, and single-vineyard wines have become a real focus for Tokaji producers. „

It’s time to pay attention to Furmint

„Here’s a wine fact for you: the grape variety, Furmint, is actually the half-sibling of Riesling and Chardonnay via its parent Gouais Blanc (aka Heunisch Weiss).”

But there’s much more to it than just a copy of its siblings in the way it captures a little bohemian wildness along with the poise and build of an aristocrat.”
