Fermentation
10% viognier is spread through the steel vats in layers to allow aromas to fan out – cools the crop to 5 degrees for half a day so that skins remain firm before destemming – 14 degrees for five days – allowed to rise to 31 degrees – vinifications lasts another two weeks – no sulphur added - use of carbonic maceration
